Criminara Chicken and Rice

Preheat oven to 425 F.

Spray bottom and sides of large oblong ridge-bottomed roaster (with lid) with olive oil, then add 1 cup volcano rice (mixed organic brown and red rice) and 1 cup white basmati rice.  Shake together.  Add 1/2 lb each frozen chopped kale and spinach in layer.  Peel and slice into wedges 3 medium white candy onions.  Break up segments and scatter in layer.  Clean and chop four carrots and scatter.  Add 1/4 cup golden rum and 3 and 3/4 cup chicken stock.  Sprinkle with 2 tsp sea salt.

Arrange 5.4 lbs fresh chicken leg quarters over all.  Pour 2 cups Blueberry Criminara 3 (see below) over chicken and sprinkle with 1 tsp sea salt.  Cover with lid and roast for 90 minutes.

Other Criminaras: Criminara CountdownThis is my fourth year running I've made something I call my Criminara sauce.  I can only make it during a few weeks in the months of May and June, as it requires access to black velvet apricots, which are shipped in to our local Hy-Vee from California.  They were a special draw when the store first opened, and I look forward eagerly to their arrival ever since.
I call it 'Criminara' because of its strong resemblence in appearance to marinara sauce, and its strong, crimson coloration.  My wife, Rachel, has become deathly allergic to tomatoes since having her appendix removed some six years ago now, and this is one of many methods I've devised to make fruit-based pasta sauces for her.  I often use other stone fruits (nectarines, plums, cherries, apricots, and peaces) with mangoes for other sauces, but I only get to make two or three batches of Criminara a year.

not only does the food have an excitingly appetizing appeal but the perfect and symmetrical assimilation of all of the photos keeps the viewer's eye moving from enticing treat to enticing treat. oh how I wish I could be on the steam line, waiting for my chance to snatch up a choice morsel in this array of tasty yummies!!! the excellent centering of the dishes also helps the viewer focus on the details of the succulent morsels. e-gad.... I am so hungry, I feel faint and I feel the overpowering urge to rush out and order a 2000.00 dollar dim sum meal!!
I would expect to be thoroughly full not after eating this meal but simply after viewing this succession of photographs. well done!!!
