Savory Shallot and Pork Chowder

Wash and chop six colored carrots (2 purple, 2 yellow, 1 orange, 1 red) and arrange sliced-side up in bottom of crockpot.  Wash and halve/third 1.5 lbs mixed gemstone potatoes (purple, red, yellow) and arrange atop carrots.  Peel one bulb elephant garlic and six shallots.

In 7 cup bowl place approx. 8 oz Tofutti faux ricotta cheese, approx. 12 oz Whole-Soy plain unsweetened yogurt, 3  tbsp pumpkin wine, 1 tbsp apple cider vinegar, 2 tsp sea salt, 1 tsp table salt, 1/4 tsp white pepper, and 1/4 tsp ground yellow mustard.  Stir together thoroughly.

Spoon about 1 cup of mixture into small food processor.  Chop and add 2 cloves of elephant garlic and two shallots.  Puree and return to bowl.  Add 1/2 cup water to processor, run to help clean out, and add to bowl.  Stir together well and pour into crockpot over all.

Chop two more shallots and remaining elephant garlic cloves.  Place in large skillet with 3 tbsp golden rum and several splashes of olive oil. Cook on medium-high (7) until begin to turn translucent, then add 1 lb ground pork, 1 lb Frick's ground ham, 1 tsp sea salt, 1 tsp table salt, 1/2 tsp coriander, 1 tsp ground savory, and 1 tsp rosemary leaf powder.  Cook until meat is no longer pink, stirring often, then add to crockpot.  Cut remaining shallots in halves or quarters and place atop.  Cover and cook for 6 hours on high.

Stir in coconut flour until reach desired thickness and serve in bowls or on plates.  It took 3 tbsp for us.

This dish is very savory, with a wonderful umami flavor reminiscent strongly of good chowder.  You would never believe that there is no dairy, with the rich flavors in it.  The potatoes and carrots carry this well, while the meat has its own complementary flavor.

The umami, or savory, flavor comes from a variety of sources.  Meats tend to have the flavor, and cured meats especially.  So do soy sauce and fermented foods such as the soy yogurt and faux ricotta.

This dish is free of gluten, dairy, egg, nuts, peanuts, beef, shellfish, fish, and canola.
